White Chili

I'm so excited! I made this delish white chili for our ward halloween party and we won the contest for best chili! Anyway, for anyone who desires here is the recipe:

Here is the base recipe I used for my white chili. I changed it up a bit, but I bet it would be delicious as is.

Ingredients:
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 medium onion, chopped
1-1/2 teaspoons garlic powder
1 tablespoon canola oil
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
2 cans (4 ounces each) chopped green chilies
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup (8 ounces) sour cream
1/2 cup heavy whipping cream

Directions:
In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Remove from the heat; stir in sour cream and cream. Yield: 7 servings.

Changes made: I used my crock pot set to high, put the 2 cans (one drained one not) great northern beans with a few shakes each of chili powder, chives, red pepper flakes and paprika. We had cooked some bacon for a previous meal and had some grease left over so I cooked the chicken in bacon grease in a frying pan with a TBS of garlic (minced, from costco) then shredded it and put it in crock pot. Then I cooked up some bacon in a frying pan, about 3/4 c chopped (uncooked). Then set it aside. Then I cooked the chopped onions in the bacon grease (I love bacon flavor...) covered for about 20 mins, then add the bacon to the onions and cook for a few more minutes, just to get the bacon flavor infused in the onions. Then add the onions and bacon to the crock pot. I didn't have any green chiles, but they would be so good in it. Then I just added the seasonings from the recipe, the sour cream and cream, and about 2 cups of frozen corn (sweet white from costco) to the crock pot and let it cook, stirring every once in awhile for about 3-4 hours.

Serve with guacamole, fresh salsa, sour cream, shredded cheese, and tortilla chips or fritos.
